The Scoville scale is a measurement of the pungency (spicy heat) of chilli peppers or other spicy foods as reported in Scoville heat units (SHU), a function of capsaicin concentration. The scale is named after its creator, American pharmacist Wilbur Scoville.
Big Jim - chillies have a mild heat rating of 500 to 2,500 on the Scoville scale. The Big Jim is large in size with the fruits noted in the Guinness Book Of Records as the largest pods ever grown.
Jalapeno - has an average heat rating of 2,500 to 8000 on the Scoville scale. The Jalapeño is possibly the most famous chilli species in the world and is great for the beginner grower as it is easy to grow and produces an abundant crop.
Thai Hot - chillies have a heat rating of up to 100,000 Scoville Units. These finger-shaped chillies are marvelous when they turn from green to red, so can be used for either ornamental or culinary use. These really are quite hot, but perfect in Thai dishes.
African Birds Eye - chilli has a heat rating of 100,000–225,000 on the Scoville scale. Also called the Piri Piri Chilli, the fruits are very pungent and perfect for a home made Peri-Peri (or Piri Piri) sauce.
Scotch Bonnet - chillies have a heat rating of around 100,000 - 350,000 Scoville Units. This famous Scotch Bonnet is named after the resemblance to a 'Tam o'shanter' hat and originate from the Carribean. The flavour is like other 'Habanero' chillies and is known for its heat.
